Serves: 2 (double for family of four)
2 medium skinless boneless chicken breast, chopped
1 cup bell pepper, chopped (use any color)
½ purple onion, chopped
1 zucchini, chopped
1 cup broccoli florets
½ cup tomatoes, plum/grape
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
¼ teaspoon paprika (optional)
Preheat oven to 500 degrees. Chop all veggies into large pieces, and chop the chicken into cubes. Place veggies and chicken in a baking dish, and add olive oil, salt, pepper, Italian seasoning, and paprika. Toss to combine. Bake for 15 minutes, or until the veggies are charred and the chicken is cooked. Enjoy with rice, pasta, quinoa, or even eat without a carb!
